How do I cheat?

See the screenshot. I located address 58519C38, and I right-click "Browse this memory region". The new window doesn't have this address, but only 58519C37 and 58519C39, why?

Also from Memory Viewer, how would I read the table? I believe the area near 58519C38 is data, not instructions.

The top half of the memory viewer is the disassembler. The bottom half is what you're looking for. Right click the bottom half to change the displayed value type.
