how do chinese people hack server-sided games?

sorry if this post is not really about cheat engine but i don't know where else to ask.
There's this one gacha game called "Destiny child" that i've been trying to find mods or hacks for but it seems like everything in the game is server sided so its impossible to mod it. but then there are regularly chinese players who seem able to hack the damage done by units and get absurd amount of damage.
How do they hack the game? i just don't get it, if its server-sided it should be impossible to modify any value.
