By following the same procedure that got you the offset originally.
You simply cannot know how the developers altered the offsets.
They could have shoved an extra 20 variables inside the structure.
Or they could have simply rearranged the variables for no reason.
Sometimes you can guess what all of the other offsets are once you find one of the new ones.
For example, lets say you noticed your health offset increased by +C.
Well if there were other offsets after it, chances are they increased by +C, at a minimum.

But you'd still have to actually guess and check to confirm if it's true or not.
When it comes to cheats that broke due to updates, rarely do you "update" them. You "redo" them.

Yeah. It depends heavily on games though. Some games are such a F-beep pain that you have to train them from scratch again.
Its hard to guess a new offset from old one if they change, sometimes the variable just isn't there in the same structure anymore and the whole game is changed. You have to find it again to know how they changed it, i have never had any luck guessing the new offset without finding it from scratch again

You can not do that.
Though it's possible to go back to the old state and try to find a signature from the old state which can be applied to the new state.
Signature or pattern scan is your Google keyword.
