Actually The Cheat Engine's Help file which you can get to on the main cheat engine window has excellent texts for beginners and is definitely somewhere you could efficiently get started

I have another one just like it!

http://siyobik.info.gf/main/reference

[EDIT]
I believe they're both from Intel 's developer manual ( in pdf )
http://www.intel.com/content/www/us/en/processors/architectures-software-developer-manuals.html

You are looking for: Three-Volume Set of Intel® 64 and IA-32 Architectures Software Developer’s Manuals namely the instruction set reference A to Z
I would recommend reading it until the AAA instruction
then continue to either http://siyobik.info.gf/main/reference or the one above this post. whichever you like the most.
On the PDF:
http://www.intel.com/content/dam/www/public/us/en/documents/manuals/64-ia-32-architectures-software-developer-instruction-set-reference-manual-325383.pdf
you'll find the explanation of what things like m2byte or r/m16 or r16 or moffs8* etc... mean and how to interpret the information you find on those pages.
