But not when the game starts by itself w/o the debugger attach from cheat engine. Very weird, not that I mind but why does this occur?

the pointer path you found most likely has it's path going through a region of memory the debugger is using. (this can especially happen if you use VEH debugging)

the last triggered breakpoint will have the state of that breakpoint saved in memory. that includes the register values used when accessing the address you're watching.
the pointerscan will find those values and then finds that they are valid for use in a pointerpath so adds it

and then there's also the chance of dumb luck. Where setting the debugger fills in a field to a memory region, and that memory region again holds an address to ingame's memory which ultimately leads to the address you're looking for. (e.g in some rare cases sometimes part of a username can be interpreted as an address)

Besides not using VEH debugger is there a way to to have it not go through the debugger region? I know there are other ways you can make a pointer, like rydians aob scan guide but I'm still wondering

Open your last good pointer scan file without attaching the debugger (attach CE to the game, but don't do anything other than basic searches) and rescan for an updated value. This should remove more bad pointer paths.

I recommend you always reboot your system at least once when doing rescans
