The rooting process for the android phones will make the system accessible by user-mode applications, so that you can modify the Operating system files, or modify the software boot-loader or flash an unoffical (Modded) operating system, or change the recovery application installed on it, or to tweak the pre-set hardware settings of the phone, rooting the phone is dangerous(you can brick the phone if you don't know what you're doing), but enables full customization

Only thing that you need to know is that you can install mods, kernel's and overclock your device. But don't root it. Those limitations are there for reason.

Yes it can be undone, don't listen to paupav, root your device
