Attach a hotkey to pause and the scan fuctions
Then when the value changes pause, press the key to scan, and resume(you can't alt tab when paused)

sorry ... I think I didn't ask the question clearly
Actually I mean the 'address' changes fast but not the 'value' changes fast .... ><
for example ~
the value I want to find is ' HP '
it won't change until I hit by something ~
but it's address changes even I just standing there and doing nothing ~

This is my suggestion, you can scan with using "value between", or like Dark Byte said use hotkey, you can set the hotkeys through Edit>Settings> hotkey
Hotkey are quite useful !
My fravorite skill:
1.Scan Unknown Initial Value/ Value Between(enter the value)
2.If the value increases , hit Hotkey( Next Scan-Increased Value )
3.If the value decreases, hit Hotkey( Next Scan-Increased Value )
3.Repeat until you find the address

yup. you probably need pointer scan. Could you tell, which engine this game uses? Is it a game?

Are you sure the address is changing? And it's not just the effect of it being an online game and you only find the client side value ?
What you can do is if the value is bigger than 100000 do a scan for that and change the values before the address changes.
The higher the value the more unique it becomes (with a few exceptions) so if it's high enough, you might find it with a first scan
