Chemical reactions.
The brain reacts to the sensory information given to it by eyes, nerves and the likes by releasing chemicals. The brain reacts to said chemicals to form emotion and memory.
I'm no encyclopedia, but that's the general idea.

except quantum physics says that the movement of elementary particles are inherently random, so an element of randomization is not ignorable and therefore allows for creation that is not entirely predetermined or definite

I'm no physicist, but I'm pretty sure the hormones the brain releases aren't elementary psrticles.
