If there is more than one instruction which accessed an address, how do I know which one to use to get the pointer? Or does it matter? Sorry for the noob question and thanks in advance for any response!

It doesn't matter in most cases as you're only interested in the offset and not the instruction
There are a few cases where there is a difference in offset, but generally speaking they are all the same so you can pick any

I had this problem too. I realized that it didn't matter. I don't even know about eax or esi, or mov or whatever these mean.
When will it ever be complex enough to matter?

One situation where it would matter is if you want the code to be executed numerous times, or only occasionally.
If you got an address that is being read or written to 100 times per frame, and you want your code jump to be executed that many times, it would matter. It works vice versa as well, if you got an instruction not being executed often and want your own code to do the same, you could make your hook there.
