Not that crazy, I had books as a kid that did this. Stare, look at next page, see colors.
The color in the first picture makes your brain used to it, and has to fill in the opposite of that color, then when they show the grayscale one, the opposite colored cones/whatever are more active and filled, so you see it "regular" (opposite of the inverted one).
