Edit: Ohyas, and assuming you're using it on low resolutions, like 1280x 1024

Why would you waste such a top quality card on 720p resolutions?
Don't even get the card if you're going to bottleneck it, get something like a 4870 instead.
To answer your question though, the 1GB 5750 would likely perform better.

the 5770 will be faster
512 is sketchy in some games, but you'll probably end up bound elsewhere before memory becomes problematic. the low resolution helps its cause.

This is a theoretical situation. You know I have a jacked up computer if you remember anything.
I would just like to hear your opinions and explanations on the importance of video memory and such.

Since you aren't gaeming at high resolution, the 512mb doesn't make much difference until you 1920x1080+, either way you can somewat max out the games you are playing with the 5770 or the 5750 at such low resolution with little or no overclock

First for understanding how much GPU memory you need, you need to understand when that memory it is used. For resolutions up to 1680x1050 a 512 MB card will be enough.Your PC is 1280x1024 resolution I would recommend the 512 version. If you want to bye 1GB card is about $30 more.
