I tried the Unknown Initial Value then lost a life and clicked Changed and it did finally find addresses but the Values kept changing without me doing anything. I tried to change the values but it would not change. I also tried Decrease instead of Changed and the same thing happened. Is that out of the ordinary or is that normal. What do I do now? Thanks, I was hoping it would work.

that is normal
It the values change without you doing anything (so no loss in lives) search for "unchanged value" (multiple times)

Were the Values in the addresses that I did find blinking/changing because the game was still running even though I had it on pause? I was curious as to why the numbers kept changing rapidly and thought that might be the reason. It is a good sign that at least I found some. Thanks!

If the values change constantly whilst the game is paused, then I'm afraid you're looking at the incorrect region. Not always (very rarely a game stores its values like that..), although keep trying.
