He's immortal as long as there's a vampire around. The author did this to not kill Jacob out of old age given that Bella turns into a vampire. Jacob then falls in love with Bella's newborn daughter (pedophile). The 4th book literally ends with an "everyone lives happily ever after" (Not exact words, but similar).

You can find the first half of the book (Was leaked before it was finished) online on the Author's site. It was ridiculously better than Bella's point of view. It goes into Edward's mind more in depth and you can see the "vampire" in him through his emotions instead of the sparkling thing that Bella describes him at. =0
