Find a corner or doorway setup or maybe automatic sliding doors.
Get out the proximity mines and set them in a place where he'll run to get to you.
Get out the grenades, move around the corner or close enough to open the sliding doors and shoot at him, then high tail it back to your hiding spot.
If you do it right, he'll get mad but not know where you are, which gives you time to put distance between him and you before he puts 2 and 2 together (he WILL figure it out then come your way).
Surviving against a big daddy is easiest in a big open space, you can easily dodge his charges and grenades.
However, it's extremely difficult to shoot a big daddy in open space, he needs to be confined to a narrow corridor or walkway so you can nail him with the grenade launcher.
I would also suggest the electro shock plasmid in your other hand, it will stun him and give you a few seconds to beat him up.
OR if you have a upgraded wrench, try freezing him then whack him a few times and run away.
(Frozen enemies take more damage from the wrench)
