I'm sure there's something out there simpler than the Apple method

theres programs out there that allows you to rip from your ipod to your itunes. you can just google it. i use ipod access. the free trial ones only let you rip a certain amount of songs but if you can get a crack you can do all your songs

I would prefer using a USB thumb drive over iPod though Wink..

Depends how much music one may have.
100GB thumb drives are difficult to find. Laughing

for the itouch i have had problems looking for a soft ware that will transfer all of my 1000+ songs, dam trials.

SharePod will do it. And its Free. It Copies songs on and off all iPods, even if the iPod is synced with another library.

NOTE: Requires iTunes to be installed/iPod drivers so that the iPod is recognised as an iPod not as a jump drive

EDIT:
It also can edit the ID3 tags, and the Album Art
