How do I cheat?

So I have a project where I'm using a fruit machine emulator but using external physical buttons to control the game and using the built-in feature to control external lamps.

I would really like to capture the data sent to the in-game screen showing the number of remaining credits or other words like nudge or continue etc

I have managed to make some progress and find some of the screen segments but when the the text on-screen changes from a number to text it's displayed as a square in cheat engine
