| I recall someone using Cheat Engine on Discord months ago to gain access to inaccessible channels, is there (or were there) methods that could potentially do such? The user had no roles, other than a verified role, and they had no modified access to such channels, they also joined the server as recently as a few hours ago, I'm just rather curious, and a retard, so I'm left wondering whether or not this is possible.

Getting the list of all channels is available via the API normally. The Discord client just hides things that you are marked as not being allowed to see. Roles are handled on the server-side for message data otherwise. You can force channels to show, but you can't get the messages without proper access. The API will not return anything.

In some cases (which I failed to mention), I had meant inaccessible channels that the user themselves could see, but couldn't send messages by normal means, such as #announcements or something along the lines. Discords servers manage the access and allowance of messages to be sent to anywhere. If you do not have permission to a channel, it wont do anything regardless if you bypass the UI of the desktop client and send it directly.
Unless you have a user token that has valid access to a channel, then no, there is no means of doing this on the client-side.
Perhaps the people that did it socially engineered a user auth token from someone who did have access and used their token to do it. Obtaining someone's auth token is not hard to do if you can get someone to run something on their system or just via copy/pasting things, authorizing a malicious third-party tool to access their account etc.
