I really like making dropdown lists to describe values (ie. 01: Potion, 02: Hi-Potion, etc.), however, I'd really like it if there was a way to set a default value (for example, anything that hasn't otherwise been described could be listed as "Unknown"). Similar to switch statements in programming. Is this already a thing that I just can't find? Or is it something that could be implemented?

Try adding "*:Unknown" (no quotes) to the dropdown list.

put it in the back of the list, not front

example you can paste:
Code:

<?xml version="1.0" encoding="utf-8"?>
<CheatTable>
  <CheatEntries>
    <CheatEntry>
      <ID>0</ID>
      <Description>"No description"</Description>
      <DropDownList ReadOnly="1" DescriptionOnly="1" DisplayValueAsItem="1">??:unreadable
0:zero
1:one
2:two
*:I can only count to two
</DropDownList>
      <LastState Value="43" RealAddress="00400500"/>
      <VariableType>4 Bytes</VariableType>
      <Address>00400500</Address>
    </CheatEntry>
  </CheatEntries>
</CheatTable>

Ok, so I found that it works, but only if you have all of the Dropdown List options checked. I suppose it's not too big of a deal, but would also it be possible to have the default value if one or more of these options isn't selected?
