and I look it up and I find the correct assembly command in olly/cheatengine

how do I find the pointer to the health address? because this is just the instruction address?

Find out what accesses that address. Read a pointer tutorial to learn how to find pointers.

Also understand what a pointer really is and howe they work in memory

Rather, right-click it and "find what addresses this instruction accesses" or whatever.
