You can't as each byte represent one ascii character.
Anyhow, just use your brain. On english languages it just means there is a space between each character. So "health" will look like "h e a l t h" _________________

For each byte, you could represent the wchar starting at its address. Granted, that would mean every unicode string would have one character out of 2 messed up, but I guess we'd have to get used to it.
Another possibility would be to add "view text starting here" wizard to the context menu. And that wizard would allow to choose between a plethora of encodings. _________________
