How do I cheat?

I am very new to Cheat Engine and am having trouble with altering some in-game stats. For example, in Borderlands I am able to find addresses to things like money and ammo and am able to save those addresses to a table for later use, but when I restart the game the addresses seem to change. I am almost positive that this has something to do with pointers, but I can't seem to figure it out. I am just looking for some tips to figure this out. Thanks.
