Is there a way to figure out where an emulators game data starts so a pointer can be followed?

Try setting a breakpoint and check the registers or stack. Perhaps one of them contains a pointer to the start of the emulated memory.
Then either do a code injection there to fetch that address, or see if you can find an easy way to find the base. (e.g pcsx2 ALWAYS loads it at 0x20000000 )

A breakpoint or a "what accesses/writess" does nothing for the value i have when it changes.
