hello you could change the height of the character? such as that of the black knight? or as the boss Ornstein? in the table what is the item master (where the head, legs, arms, etc..) could answer thanks

Depends on the game and if they scale the models that are rendered. In most games that I've found model sizes, it is usually stored as a float. Finding it is not easy though and is more of a trial and error thing since they are not really ever changed.
