So like, Dragon Ball -> Dragon Ball Z -> Dragon Ball GT.
For Z, should I watch the original or Kai? Apparently there isn't much difference.

Do it. I remember watching it at tv some years ago. I didn't miss any episode. It was the greatest series to watch.

There's a huge difference between the original and Kai. I say watch the original though. The only bad filler in DBZ is the Garlic Jr. saga, but it's not so bad that you should skip it or anything...
DBZ filler for the most part is great, but Kai gets rid of almost all of it and I hate it. Also Kai has different voice actors which completely kills the DBZ vibe.

I've tried to do this many times but every time I get around episode 60 or so I stop watching for a while, and when I want to continue watching it I can't remember what happened or where exactly I left off, so I start all over.

I always watch it dubbed in French, for nostalgic purposes.
Same goes for Yu Yu Hakusho an GTO.
