Since * is a variable wouldn't making it *.txt delete any text files?

Yes except * means containing, sort of.

*penis*.txt = anything with penis in the name
*penis.txt = anything with penis at the end of the name
penis*.txt = anything with penis before the name

*penis.txt would trigger ihaveahugepenis.txt but not mypenisishuge.txt
so *penis*.txt is best
