It's simple, I was just wondering if is it possible to edit server-sided packages via cheat engine or any other software, in a game such as san andreas multiplayer. ( You guys probably know what I'm talking about )

If you mean the packages that the client is sending, then of course. But there is no simple option for it. You need to figure out how is the game sending packages.

Sure you can edit server sided messages, just as the mailman can use a pen to write a few extra 0's after your bank statement, but when you want to spend it you'll find it's not going to work

Probably useless. A decent server will check the data that you send to it and if something is not right, you are screwed. These games are not working like single player games.
