Lets say the following, I want to edit stats:
ATT is 15. It is displayed to me.

1.New Scan>Exact Value>15.
2.I level up. ATT is 17
3.Next scan > 17
4.I get the address for the value that changes my "displayed stats"
5.Find what accesses this address.

How do I search through these ton of address to find the actual stat value?

Go play for a while and look at other windows and while doing so do an unchanged value each time. That way you filter out the addresses that contain the value of the last displayed value, and also jut values that randomly change to the value you searched for.

You should now only have a handful of addresses left so change each one and see if it has an effect or not (the window you are looking at might need a refresh though)

Also, some games are tricky and store attack as attack gained based from the base stats. (so if you started with 3 ATT it might be stored as 14 instead of 17)
