How would we go about, looking for the address when a button on the keyboard is pressed? especially the most useful one, Left click.

Keystroke values? Use Spy++

If you think you're going to find something with cheat engine regarding keystrokes then you probably do not understand what it does, and almost certainly have not completed the tutorial that comes with CE. Start by completing the tutorial.
