I'm having hard time trying to figure this out, I'm playing a game were if I change the value, the game will disconnect me and remove the data that was stored.
I find the address, and the value really easy. Is there a way to stop this the auto-disconnect, from denying access to this address from a check-sum?
[Edit] If i change the value, I can play for 15-30 seconds before it kicks me. _________________

Killing the CRC's (making a CRC Bypass).
Or... with an ASM Instruction... the game will change the value, without you intervention. i guess will not kick you. _________________

How do I find the address/process that checks my values?
..and how do I end the process? _________________

Wich process? and why you want end it?
I don't know how to find the address/process that check the values, maybe another cheater can tell you.
For find the "address/process" <- asm instruction that changes the value, you have to make the next steps (are clear in the image by that reason, i will not write you, if you don't get it then i will do it).
The examples that i have made are in Yu-Gi-OH - PSX:
Right there you have to change the "ebx" (probably is another, in your case), and the same game will change the value automatically, or simply use the code injection. (if i'm wrong please some correct me).

I'm not huge into hacking, so I'm not super knowledgeable. I apologize for that.
So after i find the ebx location; how do i change it? _________________

I don't think so, if you change the value from the way of "no client-side" , the check-sum will know it. Unless you modify the "text" value, and... if you make it, probably doesn't work because you are changing the "visible" value, not in memory.

You can make it manually, using the same CE:
When i shot in the game, the bullets value has changed to 80:

And if you want make it from another way, just use code injection. _________________
