How many fans can it control?
Well if I were you I would look at the specs. It might possibly say(up to 5 fans).

When you connect the fan to a molex, the fan usually runs at its max rpm since there is no speed control on it.

This. Thats where that knob system comes in. It sticks out the back side of the pc and takes up 1 panel. Its pretty nice actually. Out of the way and very functional.

just go to the BIOS , go to the fan settings disable automatic and it will run at max always.

That would only do anything for case fans if they were connected to the motherboard.

Idk about you, but my old case's fans and the fans of this newer case are connected to the mobo, isn't that pretty normal?

Not really. Most mobos have 1 fan port for the back fan. The rest connect via adapter that converts the 3/4pin fan connector into a 4pin moldex.
