Er, are latex gloves enough protection for when building a PC?

If you mean against static, then no, not necessarily. The gloves are pretty unnecessary, but you should always ground yourself to the case (either with some fancy alligator clip-like system you can buy or with plain old wire). Most risk from static electricity is in dry times of the year like winter, but it's better to be safe than sorry.

They are not necessary, and working without gloves would be easier.

Well you could by an anti static wrist strap for $5. I stole one from the course I'm doing. But if not just ground yourself by touching the metal frame of your case before you touch your hardware.
