I bought an album on iTunes, if I go to the folder on my computer and take out the .mp3, then use it in a non-profit Flash video/game with credits, could I be in any form of legal trouble?

Dunno, but if they are, you can burn them to a disc through iTunes then use the thing in iTunes that grabs the .mp3s from a disc and they won't be protected anymore.

Anyone else know whether or not you could get in any for of legal trouble by doing that?

Technically I'm sure that you could get in trouble for it.
If I use the example of youtube, on that if you have a song on one of your video's, some bands will not care, some will want the "Content in this video from _______" on the side, and some will get it removed off the site.

I'm no expert in law, but I think that for something minor like that, it really depends on how pissy the band gets about it, although they are within their rights to get it removed.

Why would you buy a .mp3 if its even protected and can't use it..
When you can with a downloaded one?

If I remember correctly, during the Apple Expo, Jobs said they notice that DRM sucks and the person who rightfully bought the music needs to have the freedom to hear it on any device they want. So what they're planning to do is make all music DRM free (iTunes Plus). But of course I think there are still some restrictions to it.
