Thinking about it logically, it's quite obviously not non-existant or it would not be running. Therefore, there must be a way to access it.

Can someone tell me how GameGuard hides MapleStory's process?

It modifies the EPROCESS block in kernel mode. Being a doubly-linked list you just have to modify some pointers to get the surrounding nodes to point around your own.
