changing the recommended screen refresh rate of my moniter to an unrecommended one.

Currently its on 75 Hertz and thats the highest, safe option.

If I were to change it to 100 Hertz, what would be the consequences (if any)?

None. If your monitor can't support it, it will simply go black, or state out of range, or something similar. If this happens, just press ESC or wait until the test period times out and it will revert back. I've never come across any monitor that has been damaged because of this.

LCDs/TFTs are completely unaffected by any changes anyway.
