if im going to crossfire should i save myself 50 bux and get the one with 512 mb video memory, or should i go with the 1 gig?

It depends on the resolution you're playing (AA+AF counts too), and the card you're referring to.

I think you should be fine with 2 512MB HD4850s, unless you run games at extremely high resolutions (1920x1080/1920x1200 and above), plus some anti-aliasing and anisotropic filtering. The 1GB version is probably strained by the 256-bit memory bus though.

| Some games will happily crunch down that much video ram, especially at higher resolutions. You'll probably be fine for the most part at 512 though.

Always depends on what you have to do with it. Two 512 in crossfire should be good enough.

It's just a big waste of money. I know many people who can deal with Crysis fine with two 512 MB.

IIRC, at 1440x900 resolution, no AA or AF, with the specs on very high, Crysis only takes 380MB of VRAM. Just enough for my 8800GS to handle. You'll want to have some more headroom though. Most 19"/20" monitors should be fine with just 512MB of VRAM.
Here's an graph I dug up through Google. It's a bit big in terms of pixels. Make note that this is under the Crysis Demo, I'm pretty sure the full version takes more VRAM.
