I am just curious, what are the main differences?
For example... motherboard1 has 3 PCI-E16x and motherboard2 does not, ect ect

Also can you OC the CPU in the BIOS with these boards?

You can O/C the cpu from any modern bios... if thats what you meant...
go to manufacturers website bam and compare them yourself Best way.

Also thats not true, Intel Brand Motherboards do not allow you to OC, thats why i have to do Hard Mods to OC

Its dependant on the bios chip used...and seen as there all so common, it is possible. Done it myself

Some thing new in the 780i (straight off the top of my head):
PCI-e 2.0 (double transfer speed from PCI-e 1.1)
New chipset
3x 8800GTXs/Ultras
Well, some other cool stuff.
If you are going to get a high-end 700 series, you might as well get the 790i.

In other words, ATM, it is worth it.
(If you plan on using the PCI-E 2.0, make sure the part in it supports it.)

From what I know, 680i does not support 45nm processors and only has 2 PCI-E 2.0 slots while 780i does support 45nm processors and has 2 PCI-E 2.0 slots and 1 PCI-E 1.1 slot(is that correct?). That's the biggest difference on these 2 chipsets.

The 680i is outdated and doesn't even support modern (45nm) processors. Also keep in mind that PCI-e 2.0 brings no real world benefits for now and the foreseeable future so don't let that influence your decision too much.

Although wth is the point in PCI-E 2.0 at this point in time?
No system or should I say game on a fast system cannot get close enough to 8x PCI-E, let alone full 16x.... Then PCI-2.0 can theoretically push that kind of data but in both directions at the same time (much like dual-channel RAM)... so thats like 32x combined rate.... nowhere near yet!!!
But then again you want a decent mobo, so get it anyway

PCI-E 2.0 is for future use... The card is not even able to calculate that much data to send it through
