With CrossFireX, you can mix-and-match video cards, so yes, it should work. I wouldn't imagine why you would do that though, I think 2 512MB cards are good enough.

Yes it your not going to play with very high resulotion you should go for
512MB versions.

And with those cards you can't play so high res so you should 100%
get 512MB.

I'm going to have to say get the 1GB. Normally, I'd say the 512MB card is the way to go. However, with multi-GPU setups the framebuffer is unshared and as such no matter how many 512MB cards you have, you're still stuck with 512MB to use across all GPU's. 512MB is enough for one card, but now you're looking at 256MB per card and that simply won't cut it. Also, if you're considering Crosfire you probably run higher resolutions/AA, so that's all the more reason to get the 1GB cards.

I've seen the 1GB 4870's get significantly better frame rates than 512MB ones, as much as 11% in Crysis. Considering that, looking at 256MB per GPU simply won't perform nearly as good as 512MB per GPU.

Maybe on REALLY high res.
