How do I know what to search for to do this? It counts in seconds and milliseconds.

Are you see the counting or not? If you see then search for the seconds and the milliseconds separate. And then freeze one of them, the seconds or the milliseconds. Else if you can't see the value of it, then search for an unknown value. And do the same when you found the value.

Yes. I see the counter.
EDIT: This is what the timer looks like. The game is Robot Wars Arenas of Destruction by the way. Released in 2001, should be quite easy to freeze this timer. I also think the timer shows up when it's ten seconds left in the battle. There are two timers in the game. One elapsed time counter in the pause menu, and one that shows up when it's ten seconds left to fight.

Hey saken,
Sorry for the late answer, you should search for the value what you see. 8 for the minutes and 18 for the seconds, or convert the minutes into second and sum it...(Do not forget to check the PAUSE THE GAME WHILE SCANNING box, or just pause the game.)
If it's not working, then search for unknown initial value, and search for decreased value.
Note that sometimes the value increasing, so better to search for changed value, and for faster filtration, compare with the first scan!

Just do an unknown initial scan and then filter by increased/decreased changed/unchanged then.

What also works for me sometimes;
1. run the game in a window instead of full screen
2. search for unknown intial value (timers can use floating values too)
3. select "decreased value" for next scan
4. spam the "next scan" button
You may not get down to 1 value but it usually roots out values that "jump around" a lot

And that's a good thing because then you don't need to alt-tab out of the game all the time to do the search in cheat engine. Or does the game pause automatically when it the windows loses focus?
Finding timers can be a drag. Sometimes the game allocates a new address for the timer each time, forcing you to find the base address before the initial timer runs out... When that happens, also use Speedhack to slow the frame cycle rate down.
Other than that, I'm all out of tips. Maybe more capable hackers can help more.

Some third-party programs can be used to force the application to run in windowed mode.
Winexplorer is one of the more popular choices because it is loaded with customizable features.
