Is there anyway I could block people from uninstalling add-ons in firefox?

By default you can't, it doesn't offer features to lock down the addons / plugins. Firefox is open source though so you could modify it to your needs. Or you could suggest to include addons to be added to the 'master password' requirement list so users must supply a password to alter addons.

Wiccaan is correct. Unless we are talking about a totally separate user account on the computer in which case yes you can. Just remove all permissions to the moz folder and take ownership of the folder and contents as your user. This will make it so that no one but you can modify Firefox. Due to them not having mod permissions.
