You could convert it to an AVI, edit it, then convert to GIF, but I'm sure theres an easier and less time consuming way.

Use jDownloader to download the video, and then make the video to an AVI.

Ask Cryoma about how he does it, I'm sure there is an easier way.

You can either go to downloadyoutubevideos.com (funky quality) or just change the video url from youtube.com/* to youtubemp4.com/* to get a HQ mp4 format.
If you want other formats like flv/mpg, go with this greasemonkey script.

Then pick your video editor of choice (windows movie maker will work).
If you want to export as gif, I recommend camtasia studio.
It's like a beastly wmm.
