You do not need more than one cooler. In fact, you could do fine without ANY coolers. My build is pretty similar to yours (basically the same except with a 500GB HDD and an AMD Athlon II X4), and it doesn't have any coolers.

I agree entirely. A PSU is the LAST thing you want to skimp out on. Just read the comments on Newegg about super cheap PSUs. Dozens of people have the same story, the PSU either failed within a few weeks/months or right away, and sometimes exploded/caught their entire build on fire/destroyed everything.
The PSU is connected to EVERYTHING on your build. If it has problems, so will everything else.

It should be fine, although the new Lynnfield processors that use DMI only have 16 PCIe lanes, so you're going to be stuck with dual x8 slots, effectively. One HD 5850 will blow through everything. You might want to wait until GT 300 comes out; even if you don't intend to get it, it'll probably drop the HD 5850 to the low $200s.
Multi-GPU is still best on the un-restrained Nehalem processors which are using the higher-bandwidth QPI bus. However, even PCIe 2.0 x8 is fast, essentially the same bandwidth as PCIe 1.x x16, which I'm using. I'm sure it isn't causing the bottleneck on my side.
TL;DR: You'll have no problems running dual HD 5850s, and with little or no bottleneck due to a restrained DMI bus.

yes, 8x has more than enough bandwidth.
there's very, very little difference right now.
