.wmv, .avi, .3gp for my video files
but what is the best audio and video format?

There isn't necessarily a "best" format. You could get FLAC if you want, which is the format used by songs on CDs which is very high quality, but it takes up a ton of space (12-14 songs=700MB). You could also get lossless .wavs of your music if you wish, but again it'll take up a ton of space. Personally, I keep all my music as .mp3 @ either 256kbps or 320kbps. There isn't much point in having it any higher quality, because you won't hear a difference.

| I just use LAME VBR at around 192kbps (that's if I have to convert from lossless or another format). For lossy codecs, there isn't a huge difference in sound quality until you get to like 128 kbps and below (where aac takes the lead, if I remember correctly).

FLAC (compressed, lossless) is not what's used in audio CDs. Rather, uncompressed PCM (in other words, WAV).
Most of my music is LAME VBR (MP3), usually at higher average bitrates (192kbps-256kbps).
@OP: The file formats you mentioned are all containers; they hold multimedia encoded in different formats (ie. .avi can contain a variety of different audio and video streams-DivX, XviD, MP3, AC3, etc). What really is more important is the type of compression used, as uncompressed 32-bit video can grow to very large sizes (90 frames of video at VGA 640x480 is around 250MB). H.264 is the standard for most HD video, and performs better than older MPEG-4 video codecs (Xvid, DivX) encoded at lower bitrates. As far as audio goes, it's up to how much quality you want. Dolby DTS goes well with HD video, although AC3 and VBR MP3 is also used often in lower-quality media.
As far as the container format goes, the Matroska container does it all (can contain literally every codec and have an 'unlimited' number of different multimedia streams). But it gets a lot of bashing from people since it's not multi-platform friendly. MP4 is better if you view it from that position (mainstream device support outside of PCs).

Yes and new sound cards recreates the loss that mp3 compression causes.
