I don't know what stats on these parts of computers really mean, and if they change computer performance a ton. Thanks in advance for clearing up what these statistics mean!

I'm guessing your processor is a Core 2 Duo. It is dual-core, so it can multitask better than single-cored CPUs such as Pentiums and Celerons. For your Graphics Card, I think it is OK (remembering I'm not a graphics freak).

For the rest, I wouldn't really care.

processors (I do believe the model you're looking at is the C2D E5200, but you didn't specify)

800MHz FSB - The bandwidth in which the CPU communicates with the northbridge memory controller, IIRC. It doesn't have too much of an effect on performance, although you want to aim for a 1333MHz FSB for modern CPUs. It can hinder overclocking capability though.
45 nm - The process in which the CPU is manufactured on. 45nm is the latest tech released to the public as of now. 45nm tech is better because it takes less voltage to operate and cools a bit better, thus increased overclocking capability.
2MB L2 Cache - The amount of CPU "RAM" that is accessed after the level 1 cache, and before the level 3 cache (Core 2s don't have L3 cache). The CPU accesses the L1 cache (relatively small, a few KB), then the L2 cache (2MB in your CPU), system RAM, and finally hard drive page file. It takes longer to access memory farther down the line (latency), so it's helpful to have more L2 cache.


video cards

Radeon HD 4870 - The ATI model of the graphics card. It's comparably fast, but your CPU will bottleneck it terribly, if I'm not mistaken.
1GB GDDR5 - RAM and RAM speed. 1GB of VRAM on a 256-bit wide memory bus/lane won't be used effectively, performance won't improve very much except in extremely VRAM hungry games and applications. Aim for the 512MB model for better bang-for-your-buck. GDDR5 is the memory specifications, it's pretty sweet 'cuz it's quad pumped (QDR) as opposed to other memory specifications like GDDR3 that are dual pumped (DDR). Realistically, performance gains aren't that great. NVIDIA's not using it because they know their current architecture will not provide optimal performance with GDDR5 (thus, I would think they are just that bit wiser than ATI, cutting production costs with cheaper, as-efficient RAM).
PCI Express 2.0 x16 - The interface in which your motherboard connects to your graphics card. It's mathematically capable of supporting 8GB/s transfers, which is overkill for most video cards on the market. The 2.0 specification is backwards compatible with 1.0, 1.0a, and 1.1.


power supply

EPS12V - I have to admit, I didn't know this one off the top of my head. It's the form factor (similar to the ATX form factor that's standard for mid-tower and full-tower ATX cases).
100 - 240 V - I do believe this is the voltage regulator for your region, 240V-ish for the European region, and 115v for the American region. You'll have to look up your regions specifications to get detailed readings.
80 PLUS Certified - Power supply efficiency. Power conversion is improved, and so you won't need a low-efficiency 1 megawatt power supply just to run your super system.


motherboards

LGA 775 - Socket type accepted by the motherboard. LGA 775 (775 pins) is the standard for all Core 2 models (except for the QX9775), a few Xeon server processors, and a few Netburst-based processors (Pentium 4, Pentium D, Celeron Dual Core). Not really a speed measurement.
NVIDIA nForce 750i SLI - NVIDIA motherboard model.
4×240pin DDR2 1066 - 4x is the number of DIMMs (the sticks of RAM you're getting, 240 pin is the number of pins at the bottom of the RAM DIMMs that align to your motherboard. DDR2 is the RAM specifications (similar to GDDR3, GDDR4, GDDR5, you get the idea). It usually provides a great trade off between performance and price, with low latency compared to DDR3, but higher voltage and lower speed capabilities. 1066 is the RAM speed, but unless you're running a CPU with a FSB rated at 533MHz (FSBs are quad pumped, so an effective ~2100MHz), you're wasting that RAM speed. Your RAM will have to wait up for your CPU FSB to catch up, and then continue with the next process. You won't be losing any performance, but it might be better distributed in the form of lower RAM latency.

We can probably help you better if you were to post the model of each component, but I'll try and help you with some basic terminology:
FSB - Basically how fast the CPU can communicate with the memory (RAM)
45nm - Indicates transistor size in the chip. Generally, the smaller the number, the newer the technology (45 being current). Also, the slower the number, the less heat the processor outputs, meaning the ability to last longer, have a higher clock (speed), and use up less power.
L2 Cache - Level 2 cache can be seen as a "super-fast" version of RAM, located in the chip. There is also L1 cache, which is yet faster, but has less capacity.
GDDR5 - Graphics card memory
PCI Express 2.0 x16 - the place on the motherboard to put video cards. The newer version of PCI Express
LGA 775 - the processor socket type of the motherboard. 775 is used from Intel Pentium 4s to Core 2 Duo/Quad/Extremes. The new i7s are on a new socket, 1366, and AMD processors are on separate sockets from Intels. (Basically, this tells you what kind of CPU you can use with the motherboard.)
SLi - The technology allowing you to use more than one (NVidia) video card in tandem. There is also Crossfire, which is the same but for ATI graphics cards.
4×240pin DDR2 1066 - This means you have four slots for memory of the type: DDR2 (240-pin), up to DDR2-1066 (which is not to say you couldn't put in memory of a lower speed).
