Well, Core 2 and Xeons are both good for servers, but Core 2s are probably made more to the needs of gamers ( ie graphics stuff )...
Seeing as most/all servers have NO graphics at all, why would they need a processor that tends to lean to the graphics friendly user?
All in all, id go with a Core 2 for a server and a desktop.
-- Educated guess.

I'm only certain that Xeons go through more rigorous stress testing, compared to Core 2s. They need to survive heavy loads 24/7.
They're a bit more expensive.
They might have different power and thermal limits, making them good for overclocking too.
A large number of them use LGA771, the server socket.

As far as i know there has alreay been a topic on this, but i'll answer it anyway. In that topic they said a Xeon CPU is just a rebranded Core2, but rigorously tested to make sure it can handle heavy load 24/7.
Xeon's also come in 2 different sockets, 775 being the normal one and 771 supporting double CPU's (yesh, running 2 3,2Ghz Quad Core's iz possible)
The prices are pretty much the same, a Core2Duo 3,0 Ghz is 160 USD, the Xeon counterpart 190, Core2Quad 2,66 is 320 USD, the Xeon 290.
Though the Xeon mobo's are more expensive.
sorry if there are any typos, keyboard's dying.

Xeon is for a server. A server is a server because computers are linked to it and they all connect together via this server, so mess with the server, mess with all the computers. Personal computers are everything built into one and the only way to mess with it if you aren't dumb is through the internet. Another difference is that a server CPU is that it runs for days and weeks and months without a slight downfall on performance.

| Xeons typically have more cache, a higher FSB, and are tested to work under harsher conditions. The 771 Xeons also work in multi-socket systems.
