Strings are pieces of text
Just like the text i'm typing in here.
Games use strings to show you information, or to store information (like your profile name etc...)

Generally no, text is just a representation of the real values in a game. Only really bad programmed games can be cheated by changing strings

sometimes you can find things like level passwords if your lucky
if you get the second level password in a game for instance,,
you can try text searching for it
and see if there are any other passwords near it,,
sometimes works,,
but don't count on it,,,
if its unicode for example
or encryted

Oh yes, text is also usefull to speed up refinding your addresses.
(e.g.: If your name is stored 100 bytes before your gold you can just scan for your name instead of gold, wich will usually be faster)
