I don't know if video memory and memory work the same way.
If you write game with dx or opengl,it seems they use texture with dynamic and static mode,if you want to modify pixel info,you need to lock that surface,then write to it.
Haven't tried to modify with CE yet.
How to find?In my opinion,use IDA to get a general idea of the program,find some function name dx/opengl about texture creation.Then set break point and jump to that location and try if it works.So depend on what kind of game you're working on.
Some game made by unity3d may have easy way to achieve it.
So better get more infomation about the game,then try to think as the game developper.If you were the game developper,what you may do about the texture or video.
If you are trying to extract game Assets,maybe try google will be more useful.There are genius may have already written tools to do those thing.
