This is in regards to Final Fantasy VI PC port from iOS. I've found a bestiary cheat table that will fill the bestiary. The script is as follows:

What I'm trying to do is change number killed of a SINGLE entry in the bestiary to another value (and add an entry that I don't have a value for). I'm trying to use the script above to help pin point how to do this. Simple scanning methods haven't yielded anything - I can never pin point where the data is stored.
What I've figured out so far is that the AOB signature in this script is a reference to a sub procedure that is called when the user opens the bestiary in the game.
From what I can tell, it looks to be called in a loop as one of the register values increases by one every time the breakpoint at this location is hit. However, this isn't the case all the time. It will increase up to a point (maybe 150 or so), then jump to another value and increase by one for a while, then jump around a lot - so maybe not.
I'm looking for tips on how i can achieve my goal and also what the script is doing after the AOB scan. I'm an experienced programmer in a few managed memory languages and have some old experience in C++ and cursory knowledge of assembler.
