Well, it's a Unity/mono game,so it's kind of pointless on using pointerscan because the base address is dynamic...
Use mono features instead...
Here's a script that scan for GameManager address:

HandMovementUpdate+2:

registersymbol(_game)
[DISABLE]

When the script had activate,
[[_game]]+40 is bloodLevel address | Do you know how I can use this to locate the changing value? So my previous 2000+ pointer results come up with triggers to do stuff in game but I need to find the one that freezes the heart so there's no blood loss. I originally tried one of those pointers as I said it in about five seconds brought my blood loss from 5400 to zero, killing my patient and crashing my game. If it was a static value it would be easier I guess to find but because of the nature of health in the game it's difficult for this newbie to find.

Don't use pointer scan for this kind of game...
Use Mono features(CE) + Mono Decompiler(eg: .Net Reflector/ILSpy) to ease on memory editing in this game...
loseBloodSpeed/lose Rate ? it's +8 from bloodLevel variable which if you activate the script that I had given,the address will be : [[_game]]+48
